Best breaded baked chicken

 

Ingredients

Breadcrumb

  • 1 1/2 cups panko breadcrumbs 
  • Oil spray/Pam spray

Batter

  • 1 egg
  • 1 tbsp mayonnaise
  • 1 1/2 tbsp dijon mustard (or other mustard)
  • 2 tbsp flour
  • 1/2 tsp salt
  • Black pepper

Chicken

  • lb chicken tenderloins (or breast cut into 2/3" / 1.5cm thick slices, lengthwise)
  • Oil spray

Instructions

  • Preheat oven to 390F.
  • Line baking pan with parchment paper. Spread panko on a baking tray, spray with oil (spray vertically to avoid blowing the panko off the tray), then bake for 3 to 5 minutes until light golden. 
  • Place a rack on a baking tray (not critical but bakes more evenly)-spray with PAM.
  • Place the Batter ingredients in a bowl and whisk until combined.
  • Add the chicken into the Batter and toss to coat.

Crumbing (see video & photo in post)

  • Pick up chicken with tongs and place it into the panko bowl or place on sheet.
  • Sprinkle surface with breadcrumbs, then press down to adhere. Transfer onto baking tray. Marvel at clean fingers, repeat with remaining chicken.
  • Spray lightly with oil, sprinkle with a touch of salt (optional). Bake 15 minutes (medium) or up to 20 minutes if gigantic. Any longer = dried out chicken.
  • Remove from oven and serve immediately, with Sauce of choice (Honey Mustard pictured, see Note 2) and sprinkled with fresh parsley, if desired.

Honey Garlic Shrimp Skillet

This smoky and sweet honey garlic shrimp skillet is super easy with only five ingredients and cooked in less than 15 minutes!
 

  • 1 lb. jumbo or large raw shrimp, peeled and deveined

SAUCE:

  • 2 medium garlic cloves, minced / 2 teaspoons garlic, minced
  • 1/2 teaspoon fresh ginger, minced (optional)
  • 4 tablespoons honey
  • 3 tablespoons reduced sodium soy sauce
(cooked rice, stemmed broccoli and added chopped pineapple to the skillet to make a bowl type dish) 

INSTRUCTIONS

  1. Combine the sauce ingredients and divide the sauce in half.
  2. Marinate the shrimp with one-half of the sauce for 15-30 minutes. Discard marinade.
  3. Over medium-high heat in a skillet, pan-sear the shrimp in some oil. Sear them on both sides until cooked, about 1-2 minutes per side.
  4. Dish and serve hot, drizzled with the remaining sauce and fresh parsley or green onions as an optional garnish.
  5. Enjoy!

Light Lemon Garlic Pasta with Salmon

 

  • 16 ozrigatoni/pasta
  • 1 teaspoon garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1/2 cup fresh basil leaves, finely chopped
  • Salt and pepper to taste
  • 1 lbsalmon fillet
  • Zest of one lemon
  • 2 tablespoons lemon juice
  • 2 teaspoons capers
  • Parmesan cheese, shaved or grated

INSTRUCTIONS

  1. Cook the pasta according to package directions.
  2. Meanwhile, season salmon with salt and pepper to taste and bake at 350 degrees F for 15-20 minutes, depending on thickness.
  3. Once the pasta is cooked, drain and toss with garlic, olive oil, basil and season with salt and pepper to taste.
  4. Add lemon juice, zest and capers to the pasta and toss to mix.
  5. Flake the salmon into bite-size pieces.
  6. Gently toss salmon with the pasta.
  7. Dish and serve hot topped with freshly grated or shaved Parmesan cheese.
